Egg Free Sugar Cookies with Egg Free Royal Icing

Seeing as it is nearing Valentine's Day, I feel compelled to celebrate the greeting card holiday as stores are packed with pink and red themed candies and decorations. Except, I decided against the expensive gift giving and went with something a little more delicious: sugar cookies. I like how easy sugar cookies are to make allergen free, and they also don't take a lot of time to make. I found this version of sugar cookies on the blog, Art of Dessert. For this recipe, you'll need:

  • 3 1/4 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter or margarine, softened to room temperature
  • 1 1/4 cups sugar
  • 1 tsp vanilla
  • 1/4 cup rice/almond/soy milk

1. Sift together flour, baking powder and salt in a bowl. Set aside.

2. In a separate bowl, cream butter and sugar until light and fluffy.

3. Mix in vanilla extract and milk.

4. Slowly add in the dry ingredients.

5. Divide the cookie dough in half, form them into discs and wrap in wax paper or plastic wrap. Chill for one hour or until slightly firm.

6. On a lightly floured surface, roll out one of the discs to about 1/4 inches thick. Cut into shapes and transfers onto a cookie sheet lined with parchment paper. If the dough becomes too soft to handle, place back in the fridge to chill until firm again. Bake at 375 degrees Fahrenheit for 10-12 minutes or until golden brown around the edges.

While the cookies are baking, I started in on the icing. For this recipe, you'll need:

  • 2 oz. cream cheese at room temperature
  • 2 tbsp corn syrup
  • 1 tsp vanilla
  • 1/4 cup rice/almond/soy milk
  • 4 1/2 cups powdered sugar
  • optional: food colouring

1. Using an electric mixer, beat together cream cheese, corn syrup and vanilla until smooth. Mix in milk.

2. Slowly add the powdered sugar, one cup at a time, until the icing is at your desired consistency. Add in food colouring and mix well.

3. Decorate the cookies either by piping the icing using a pastry bag or spreading it onto the cookie with a spoon or offset spatula.

4. Allow the icing to set for 24 hours before transferring (aka packing into a cookie jar or tin) the decorated cookies.

The verdict:

The sugar cookies themselves aren't too sweet, so combined with the exceptionally sugary icing it makes for a great combination. I think these would be great to bring to potlucks and events because they are simple, yet delicious.
