Chocolate Covered Pretzels

Having food allergies has often left me out of the dessert loop because so many of the cakes and pastries and baked goods contain eggs or nuts. But chocolate covered pretzels   (unless topped with nuts) are a winner, and I decided I wanted to make my own delicious batch. I found this recipe on about.com by Elizabeth LaBau, who is a pastry chef. That's the great thing about the internet, so many very talented people and amazing recipes all in one place. I was also able to purchase all the ingredients for this recipe at Wal-Mart for under $10, so this is definitely a great budget treat. To begin, you'll need:

  • 1 package semi-sweet chocolate chips or chopped chocolate
  • 1 Tbsp shortening
  • 2 dozen pretzel rods or large pretzel twists (I just bought a bag of pretzels, the leftovers are delicious too)
  • Assorted sprinkles or small candies (optional)
  • 1/2 cup white chocolate chips (optional)

How to make it:

1. Prepare a baking sheet by lining it with aluminum foil.

2. Combine the chocolate chips or chopped chocolate and the shortening in a large microwave-safe bowl. Microwave until chocolate is melted, stirring every 20-30 seconds, careful to not overheat it.

3. If using pretzel rods, dip in leaving an inch uncovered. If using twists, drop into chocolate and take out with a fork. Shake to remove excess chocolate, place on a baking sheet, and place sprinkles on top while the chocolate is still wet (I decided against the sprinkles).

4. Place pretzels in the fridge to set for 30 minutes.

5. If desired, melt white chocolate and drizzle over pretzels for decoration. Return them to the fridge to set white chocolate before serving. (I used a plastic bag with a tiny hole cut in the bottom as a piping bag).

The verdict:

These are FANTASTIC! The semi-sweet chocolate really offsets the salty crunch of the pretzels. As much as I dislike using shortening, it really helped to melt the chocolate and make it easy to coat the pretzels. This recipe did take me over an hour to complete; getting the excess chocolate off the pretzels took a lot longer than I thought. But it is definitely worth it, these are a great little treat!
